Did you know I could not find one blue spirulina oatmeal recipe with I Bing searched? How sad is that? Especially when you realize how incredibly cool blue spirulina is! Don’t get me wrong, I was a bit intimidated by it when I first opened it. It reminded me of a dehydrated Cookie Monster or Bob from ‘Monsters vs. Aliens’. I didn’t use it for the longest time because of my fear. But what was I missing out on?
All over Instagram you can smoothie bowls full of gorgeous colors. Some of those vibrant blues are thanks to the humble blue spirulina powder. You have seen me use green spirulina powder before, one of the reasons is that green is more common than the blue… like.. way more common. I was unable to find any within a hundred mile radius of where I live. So here is one moment where I am thankful for technology and online options. I got my bag of Blue Spirulina from Raw Nice. I topped my oatmeal with lots of good a crunchy goodies (I got a bit carried away with the goodness). I’m a big contrast in textures kind of girl, so crunch is big on my list. My dad made a homemade granola mix if you will with Purely Elizabeth’s Granola (Banana Nut-Butter Grain Free Granola, Cranberry Pecan and Blueberry Hemp Ancient Grains Granola), and Woodstock’s Lemon Almonds, Sunflower Seeds, and Pecan Halves.
I cooked my oats with a bit of banana for extra sweetness. I know some people think spirulina has a strong taste (I personally don’t) but feel free to add more or less sweetness for your liking. I use D’vash Date Nectar, and find that it works very well!
- ½c. gluten free oats
- 1c. water
- ½ banana (use frozen for thinner oats)
- 1t. vanilla extract
- ½T. date nectar (optional)
- 1- 1½t. blue spirulina powder
- Pomegranate Seeds
- Homemade Granola Mix
- In a microwave safe bowl, mix all the ingredients except the toppings and blue spirulina.
- Microwave for 2 minutes, or until you reach your desired consistency.
- Mix in the blue spirulina.
- Top with pomegranate seeds and granola.
