This summer we picked 80 pounds of blueberries from our local blueberry farm. Crazy I know! Afterwords we were like, “I think we pack too many blueberries.” So if you notice that my recipes use a lot of frozen blueberries that is why. 🙂
This particular vinaigrette is a lovely balance of sweetness from the blueberries, acidity from the red wine vinegar, and kick from the curry powder.
I love to use this on top of my Apple Cucumber Salad!
- ⅓c. frozen blueberries
- 1T. red wine vinegar
- 1T. water
- ½-1t. curry powder
- ½t. marjoram powder
- ½-1t. maple syrup
- Microwave blueberries for 30 seconds. Remove and smash with a fork. Microwave for another 30 seconds and mash again. Add remaining ingredients and mix until combined.
- Serve immediately or chilled.
