It appears that some people get into the plant-based diet and then center their diet around way too much vegan junk food. I don’t understand why they don’t utilize the wholesome ingredients that we have before us.
Don’t get me wrong I’m all for making scones and brownies, but its also really important to me to be making simple, plant-based recipes. They don’t need to be complex. They can almost be stupidly simple. But that way I can really enjoy the flavors that those ingredients have.
What really makes this recipe is the Blueberry Curry Vinaigrette that goes on top. I coined this salad the ‘princess salad’ because of the purpleish tone it gave everything. 🙂
This would be a great salad for a warm summer day. It’s crisp, refreshing, and that touch of acidity from the vinaigrette really pulls the salad together.
- 1 apple
- ½ cucumber
- Blueberry Curry Vinaigrette (link in post)
- Chop the apple and cucumber.
- Mix in vinaigrette.
- Enjoy right away, or chilled.
