My go-to breakfast is 100% zoatmeal! I may or may not be slightly obsessed with it lately. And could you blame me? A perfect breakfast bowl filled with fiber, protein, minerals, and in this case, lots of superfoods! (50 to be exact.)
I am currently right in the middle of show week! Didn’t you know? I am an actress! I have been acting since the spry age of 8 years old. But you could have found me singing “Twinkle Twinkle Little Star” on my fire place hearth, in my little pink tutu and leotard, at 3 years old. I have now gone on to bigger things as I’m performing at one of the top theaters in Grand Rapids, Michigan. It comes with its own slew of challenges and joys. Looking back 5 years, it was my goal to be preforming on this stage. But when I got here, it felt oddly empty. I realized then that I had put this goal on such a high pedestal, I was hit by, “Its just a stage… a theater… a job..”. Not to say it wasn’t exhilarating, but it was something that brought me back down to earth and really started the ‘growing up’ process for me.
During a show week everyone gets sick. So I am hiking up my vitamin D and immune boosters, and trying to wait out the storm. I luckily got a little bug early in rehearsals, so I’m praying that that is all that comes out of ‘show closeness’. 🙂
Another product I have been adding to my list lately has been Orgain Organic Superfoods all-in-one-nutrition powder. I topped this bowl with a nice array of antioxidant heavy frozen berries (blueberries, raspberries, pomegranate seeds, and strawberries), peanut butter powder (I use this brand), and I had some fresh red grapes in the fridge that I simply diced. These pesky colds, coughs, and sneezes will stay far away from this immune boosting powerhouse bowl!
I used about 1/2 scoop of the Orgain powder, but using a whole scoop will make this bowl that much more berry-lious!

- 1 small zucchini (grated)
- ¼-1/2c. gluten free rolled oats
- 1t. steel cut oats (optional)
- ½-1c. water or plant based milk
- ½-1 scoop Orgain Organic Superfoods
- 1t. tapioca starch
- ¼c. frozen berries
- ½T. peanut butter powder (1:1 powder to water for a thinner consistency)
- ¼c. diced grapes
- In a medium saucepan bring your zucchini, oats, and liquid to a bubble over medium/low heat.
- Stir occasionally to avoid sticking.
- Cook until your desired consistency. Around 10-15 minutes.
- Remove from heat and whisk in your Orgain powder, and tapioca starch.
- Top with frozen berries, prepared peanut butter powder, and diced grapes.
