Pumpkin or apple? That seems to be the number one argument in the fall season. You’ve got your apple cider people at Starbucks, and you have your pumpkin spice latte people at Starbucks. I personally waiver in between. I really like apple recipes, but there’s only a few pumpkin recipes that I really enjoy. If the pumpkin is not utilized correctly, it taste really bland to me.
When I posted my apple pie’s zoats on Instagram, the pumpkin pie people were feeling very left out. So I reluctantly made a bowl of pumpkin pies zoats. I didn’t have high expectations for it, but when I tasted it, it was pure heaven! It reminded me of my grandma’s pumpkin pie that she makes homemade every single year for Thanksgiving…. Except for that one year where she bought one from Costco and we all about died. 😉
I really think that McCormicks pumpkin spice extract makes this that much more pumpkin-y! But it is not required.
Please make sure that your pumpkin purée is 100% pumpkin and not filled with fillers. It will give off an artificial taste that is totally gross! I personally use Trader Joe’s organic pumpkin purée.
Top this lovely bowl off with some of Snickerdoodle Bar Crumbles, and you have just taken this bowl from, “Yum!” to “Holy-Pumpkin-Pie-Explode-In-My-Mouth-Goodness!”
Here’s my Vanilla Zoatmeal recipe!
- Vanilla Zoats (link in post)
- 1t. cinnamon
- 1t. allspice
- 1t. pumpkin pie extract (optional but suggested)
- 2-3T pumpkin purée
- Snickerdoodle Crumbs (link in post)
- Gluten free rolled oats
- Pumpkin purée
- Make Vanilla Zoats as directed.
- Add the spices and pumpkin purée, mix until combined.
- Top with suggested toppings, or other fall flavors of your liking!
